Villa Calini lies in the beautiful green setting of the Franciacorta wine region, on the outskirts of Brescia in northern Italy. It is a precious legacy of local heritage built on knowledge and experience, able to refine and renew itself in a continual process of improvement.
Elegant, welcoming and engaging Villa Calini was built in an exclusive location between the 17th and 18th centuries. It is made up of a central body from which two open buildings emerge. An enchanting staircase descends from the facade with its wide, protruding loggia and portico and opens up onto the rural landscape. Inside, the villa is sumptuously divided into elegant and functional spaces, charming corners and picturesque views, a perfect backdrop for unforgettable events.
The different rooms that make up the interior and the large spaces outside the Villa lend themselves to accommodate all requirements and tastes.
• The Dance Hall is a charming, old refurbished barn suitable for banquets and events up to 110 guests.
• The Granary Court is suitable for hosting banquets or conferences and comes complete with all the necessary equipment. The first floor room can be reached by elevator. It is a beautiful, evocative space capable of accommodating up to 220 guests.
• The tasteful Gallery Room can comfortably accommodate 60 seated guests and is ideal for cocktails and business meetings.
• The Stables, with its pretty arches overlooks the cloister and has a capacity of 50 guests.
• The Library Room is the perfect spot to present the dessert buffet and has its own bar. It accommodates up to 120 guests.
• The Portico is a charming semi-enclosed space, suitable for large events and summer banquets, with a capacity of 250 guests.
• The Portico Garden: a charming green setting in a large open space, suitable for the preparation of banquets and outdoor events. It can accommodate 150 guests.
• The Annexe is cosy and refined and is suitable for small events and private occasions. It has a capacity for 20 guests.

Local and natural are the cornerstones of Chef Cappotto’s winning recipes; days and seasons inspire a pure and simple Mediterranean cuisine that adheres to the authenticity of the “zero Kilometer” philosophy.
At Villa Calini everything is homemade, from the bread sticks and bread to the small pastries and cakes. We give value to what is essential in our use of produce cultivated in our vegetable garden and from the local area. Where agriculture goes hand in hand with culture and where the supply choice corresponds to a desire to preserve and promote the quality of life, starting from the table.
In order to impress the increasingly more refined and demanding tastes of those who seek a high level cuisine, the chef offers his signature menu providing constant attention to “green” flavours.
We like to ensure the highest quality, safety and freshness of every single dish by using vacuum cooking, low temperature cooking, rapid lowering of product temperatures and thorough preparation of fish served raw using an industrial grade flash chiller and freezer.
In the cellar the main protagonist is Franciacorta, as it represents our own high quality choices and above all aims to respect and regain an identity true to the local territory, its origins, habits and culture.
Paying close attention to nutrition by choosing natural foods and products from organic farming is an increasingly popular choice.
Keeping up to date with current trends and attentive to customers’ needs, Alessandro Cappotto’s restaurant offers, in unison with a more traditional and refined menu, a special "Bio Natural" proposal for “green” gourmands.
Not only vegetarian and macrobiotic menus, but also a “reconsideration of the essential”, as defined by Cappotto, where zero kilometer vegetable produce, local biological livestock and organic ingredients are used.
These concepts have inspired the following dishes:
• small salad of fruit from the local area and crunchy vegetables prepared with extra virgin olive oil from Lake Garda and caramel,
• puff pastry made with whole wheat flour and water filled with broad beans, courgette flowers, pecorino goat cheese and cream reduction,
• open ravioli with porcini mushrooms.
A natural philosophy that extends the imperative of "everything is homemade" to authentic bio events. Underlying this approach is the evolution of experimental cuisine, revisited with careful attention and knowledge of local traditions.
Born in Rome in 1969, Alessandro Cappotto entered the cooking world with a firsthand practical approach and after discovering the local territory.
From 1986 onwards, he embarked on an exciting educational culinary tour throughout Europe and Asia where he was able to learn and perfect important culinary techniques and gain valuable experience in prestigious Italian and international gastronomic establishments.
He arrived in Brescia in 1992 and soon became a working partner at Castello Malvezzi.
Just a few years later, in 1998 he began teaching at Cast Alimenti in Brescia.
Alessandro’s vocation of spreading the culture of quality food and wine is seen in the numerous publications and magazines where he appears as a guest journalist and through his own publications where he explores his personal philosophy and culinary creativity, such as the book "Kitchen Stories at Castello Malvezzi", written in collaboration with the writer Carla Perotti.
Alessandro Cappotto has received many international awards for his avid research, outstanding creative contribution to pairing food and wine and his passionate wealth of knowledge of Extra Virgin Olive Oil and of raw material in general.
The desire to constantly re-evaluate his style and broaden his experience and personal development led Chef Cappotto to head Villa Calini. Together with the support of his family he is able to create a new synergy between a more personal, human approach and highly professional standards.
A new challenge awaits and a new exciting chapter is to be told in the story of this famous Franciacorta establishment, which now boasts the renowned leadership of such a multifaceted and multitalented figure.
